Jackfruit Bulb Flour 250 gm, ziplock pouch
Once a year we make jackfruit flour for our pancake mix. Adding 16 to 20 percent of this gives us a texture and taste that we like.

How do we make this flour ?
We make two sets.
One from green jackfruit and another from day old jackfruit.
Green would be processed immediately after bringing down the fruit.
Day old would be fruit processed the next morning, by when the bulbs would have started to change color to a light yellow, because they ripen quickly.
Flour from the day old fruits would have a mild sweetness. This also lends a subtle malty flavor to the pancake or waffle.
We are offering this flour now, because it is not difficult to process a couple of fruits more.
But the work is time consuming. And the results are not very inspiring either ๐. One whole fruit may yield at best, 750 to 800 grams of flour.
The work involves a couple of hours of pulling out each bulb, removing the strands, extracting the seed and the silver sheath that covers the seed inside the bulb, then steaming the bulbs after rinsing to remove any sap and dust. The drying takes a couple of days. We used our Rational Combi oven on dehydration mode, but the machine is not functional now. So this season we will probably sun dry.
After drying the bulbs will be milled fine.
This is why we have to charge at least โน1000/- per kg to make a nice profit. We pack this in 150 grams sachets.
